 Easy camping potluck ideas

We're going camping this weekend and I need to bring two potluck dishes. We will have a cooler, so they will be kept cold, but I would like to try and make them Thursday evening and the meals are Friday dinner and Saturday lunch.

Do you have an easy-go-to pasta salad recipe? Any other suggestions? The Friday night is a deep fry night, but everyone is bringing stuff for that, so I was thinking of maybe something a little healthier!

I quite often do a chili (pre-made at home before we leave, bring it in the pot if you can and keep it in the cooler until you need to heat and serve!) And we also often do a greek pasta salad. You can chop all your veggies, cook your pasta beforehand, (put the pasta in a ziploc) and bring the bottle of dressing and just toss it on prior to eating!

Easy peasy!

I agree with the chili suggestion. Another great camping meal (that's really impressive) is to make a potroast in a dutch oven. DH does this all the time with his friends and they're always impressed. We also use it to make lasagna, cornbread, peach upside-down cake, etc.

Dutch oven cooking is totally the way to go... super easy and impressive! smile

I take frozen chicken with us, in a ziplock baggie, throw in some terriyaki sauce when it's at the house, and let it sit/marinate until it's ready to cook of saturday night. I've only ever heard good things about cooking it, my friends love it.

I am not sure from your OP if you want something cold specifically? If so, howabout a veggie pizza? Not too hard to do, and would keep for a day, or you can just throw it together before serving (bake the crescent dough crust at home and bring it along).

We do this every year for Family Camp. My DH's family has grown accustomed to me bringing fruit salad every year smile

I take pineapple, strawberries, honeydew melon, kiwi and watermelon and cut it up beforehand and put each in their own container/ziploc bag. Then things like blueberries just get washed and put in a container/ziploc. The only thing I have to do on the day of is pour them all into a bowl and mix (and if i'm adding cherries I pit the cherries immediately before serving, they don't last the 4 days very well).

hobo pizza (is that politically incorrect?)

you take pizza stuffings (cheese, mushrooms, pepperoni, a bit of sauce), throw them between two pieces of bread (aka a sandwich), put them in heavy duty foil and roast those suckas until the cheese is melty. an alternative is to buy the fire roasting sandwich makers but this will do too.

Thanks for the suggestions everyone!!

Well, don't be too jealous, it won't exactly be warm since I woke up to frost on my windsheild and 1* temps, but it'll be fun wink I think the high is forcasted at 8*.

Pulled pork? You could cook it Thursday and then just reheat on Saturday?

Potato salad might keep better than pasta salad over a couple of days.
