I need inspiration for dinner, and it only makes sense to post this question first thing in the morning when I still have time to take things out of the freezer to thaw.

So, what is everyone having for supper tonight?

I am working tonight but DH is on his own but last night we had eggs and bacon. And tomorrow night we are having homemade pizza. With homemade dough!

Parsley pesto chicken salad.

I marinate 2-3 chicken breasts in plain yogourt with cumin, oregano, ground coriander and some greek seasoning. Then I grill the chicken. Toss the chicken in a salad (romaine lettuce, cucumber, red onion, tomatoes, celery).

For the dressing, I mix 1 cup of fresh parsley, 3 Tbsp of chopped walnuts, 1/2 cup of feta, 1/4 cup of olive oil, and some pepper in a food processor.

Serve with some grilled greek pita (brushed with olive oil and sprinkled with oregano).

Takes a bit of prep time, but it's healthy and really delicious.

Haven't decided yet. Forgot to thaw something for dinner...and when I asked DH what was quick and easy in the deep freeze on the ride into work this AM. He said mini beef wellingtons and perogies.

I guess we'll scrounge until we find something...or order in.
